Buttering Up!

 

QUESTION: I first became introduced to little butter dishes, known as butter pats, while browsing tables at a local flea market. Most of the time, dealers place these in glass cases and unless antiquers look carefully, they can easily be missed. 

ANSWER: In the United States and many parts of Europe, wealthy people who had elaborate dinnerware sets for formal dining used butter pat plates primarily in the 1800s and into the early 1900. Each dinner guest was given his or her own butter pat plate on which to put a pat, or lump, of butter.

Butter pats, manufactured in a variety of designs and shapes by the finest porcelain manufacturies, first appeared in the 1850s and reached the height of popularity between 1880 and 1910, though some restaurants and railroads still used them into the 1950s and 1960s. Although also known as butter chips, butters, butter pat plates, or individual butters, they’re commonly referred to as butter pats.




And no proper Victorian table could be set without them. The Victorians loved excess and nowhere was this more evident than in their table settings. During this age of elegance, each kind of food had its own piece of china or silver, and butter wasn’t any different.

Victorians folded a serving a bread, often consumed without butter, hidden in the folds of a napkin at each place setting. If a meal course required bread to be buttered, servants placed individual miniature plates above and slightly to the left of center of the service plates. 

However, butter during the Victorian Age wasn’t commercially processed but made at home. Victorian ladies or their servants labored hard, creating butter in a wooden or stone churn, shaping it with a paddle and squeezing it to remove excess moisture. They then placed the newly churned butter into a mold or shaped it into a mound with wooden paddles. 

The molds typically held a pound of butter. Either the lady of the house or her servants cut the butter into smaller pieces  to serve for special dinners. Sometimes, they shaped the small pats of butter into unusual forms, such as rosettes. Very wealthy families often used decorative individual hand-carved butter stamps featuring the family crest or a special design. 

Made for holding an individual servings of butter, the butter pat reached its zenith during the Victorian era when ornate elegance dictated that every place setting at the dining table consist of several dishes for different foods. As a necessary part of a complete set of fine china, dinnerware manufacturers crafted butter pats with the same attention to detail, and by the turn of the 20th century, they produced them in an array of designs, patterns, and shapes—round, fan-shaped, shell-shaped, as well as the more common square. They often decorated with fish, fowl, and floral motifs, making them into miniature works of art.

Eventually, the extravagance of the Victorian Era gave way to more informal dining. This created a need for durable and practical everyday dishware. Potteries needed to destroy outdated molds and streamline production. This included butter pats, no longer required on the informal dinner table.

Butter itself was often molded or stamped to form patterns, such as flowers, on the butter’s surface. Each individual lump of butter was then placed on a butter pat plate belonging to a specific guest.

Butter pat plates produced in the 1800s and early 1900s were primarily made out of either porcelain or sterling silver, and some made of glass. They were produced as part of dinner service sets or to match existing dinner service sets. Each tiny plate was typically less than three inches square and held either one or two pats of butter at a time.

The colors and designs on the butter pat plates also got more elaborate as time went on. Floral designs were quite common. In some cases, the manufacturers shaped and colored the butter pats to resemble flowers. Square or round ones featured pictures of flowers in their centers or floral patterns around their edges. Other popular butter pat themes included animals and birds.

Butter pat patterns also changed as advertising methods evolved. Some later butter pats had pictures and slogans on them, advertising businesses, events, or advancements of some kind.

Many of the most popular butter pat producers were the “big name” porcelain producers which were historically popular for their dinnerware and decorative pieces. Haviland, Majolica, and Waverly were the most popular. Of Haviland’s up to 60,000 different patterns, most included butter pats as part of a place setting. However, there were many companies which each produced anywhere from a few to dozens of patterns made from many different materials.

Although butter pat manufacturers mass-produced them, some were more unusual. For example, several French and German butter pat manufacturers produced butter pats in the 1800s that artists hand-painted later with elaborate designs and patterns. Some of them even featured hand-painted portraits of people.

With the advent of the modern lifestyles of the 20th century. Butter pats, along with many other forms of formal Victorian dinnerware, lost their appeal. Bread and butter plates, averaging 6 inches in diameter, eventually replaced the butter pat.

Though Wedgwood and Royal Doulton still produce butter pats, they only do so for luxury hotels and First Class airline service.

Going to the Dogs

 

QUESTION: I bought these little white match holders from an antiques dealer in northern France, just across from Dover, England, so it’s quite possible they’re English. I’d like to find out their origin and date if possible. I have a collection of match holders but have never seen any like these before.

ANSWER: These match holders are quite unique and seem to be made of Parian, a type of biscuit porcelain imitating marble that was made in England and the United States in the 19th century. Designed to imitate carved marble, it had the advantage that it could be prepared in a liquid form and cast in a mold, enabling mass production.

Parian became popular with middle and upper middle class Victorian women who desired to own the marble statuary and china of the upper classes but couldn’t afford them. Parian filled this need at an affordable price. And while people normally associate Parian with grander sculptural forms and statues and items like water pitchers here in the U.S., it seems that as it’s popularity began to wane that some companies began making smaller less expensive items such as match holders. 

Because Parian had a higher proportion of feldspar than porcelain, makers fired it at a lower temperature. The increased amount of feldspar caused the finished body to be more highly vitrified, thus possessing an ivory color and having a marble-like texture that’s smoother than that of biscuit, or unglazed, porcelain. In its Victorian heyday, potteries produced hundreds of thousands of pieces of Parian ware annually. 

Though the Great London Exhibition of 1851 gave Thomas Battam credit for inventing Parian, indicating that he succeeded in producing a very perfect imitation of marble, there seemed to be controversy about who actually invented it.  While Battam may have invented it, several English factories claimed credit for its development. But the Staffordshire firm operated by William Taylor Copeland and Thomas Garrett was the first to produce and sell it in 1842, and went on to become one of its major manufacturers.

Several potteries marketed it under different names. The Copeland firm called it "statuary porcelain" because of its resemblance to the fine white marble of neoclassical sculpture. Wedgwood named it "Carrara," after the Italian quarry patronized by Michelangelo. But it was Minton which coined the word "Parian" to suggest Paros, the Greek isle that furnished much of the stone used in the classical period. Thus, it quickly became the medium's generic name.

Ultimately, potteries produced two varieties of Parian ware—Statuary Parian, used in the making of figures and reproductions of sculpture, and Standard Parian, from which they made hollowware. 

Standard Parian, with a greater proportion of feldspar in the composition but no frit, was hard porcelain. The presence of iron in the feldspar without iron silicate caused early Parian statuary to appear ivory tinted. Both English and American potters either obtained details of the original formula or worked out their own, resulting in enormous production of Parian wares on both sides of the Atlantic. Plus the invention in 1844 of a patented machine that allowed scaled reproductions of larger bronze or marble originals made replicas of figures and busts by noted sculptors widely available.

Though Minton produced several small Parian statues of dogs, it seems far more likely that Copeland-Spode produced these dog match holders since they produced a wider array of Parian ware, including match holders. They probably date from the 1890s. As time went on, Parian ware went from a less expensive substitute for marble in statuary to the material for inexpensive knickknacks.

Pottery Marks and What They Tell Us

QUESTION:
I go antiquing with a long-time friend. Inevitably, whether we’re browsing the tables at a local fleamarket or browsing in an antique shop or show, he always picks up a piece of pottery or porcelain and turns it over to see the mark. What do these marks say about the pieces besides who possibly made them? And are there any other marks from the making of the piece and what do they tell him?

ANSWER: An experienced collector of pottery can tell a lot about a piece’s origin by reading the manufacturers' marks on the bottom of each piece. These marks tell the pottery's name, its location, its company symbol, and often the pattern name or the name given to the body shape of the piece.

But there may also be other, less obvious, marks that indicate the method of production or factory flaws that show the level of quality control used by the firm. Collectors familiar with these signs can quickly distinguish between factory flaws and more serious indicators of damage and wear inflicted upon that same piece once it has left the  factory. Knowing the difference allows the experienced collector to purchase pottery with confidence.

While most manufacturer’s marks, which may he printed, incised, impressed, stamped, or applied as paper labels, usually contain the pottery’s name, initials, symbol and location---or some combination of these—some are rather sparse and may only contain a letter within a geometric shape or a crest. 

In the case of the larger firms, a pottery mark also has publicity value and shows the buyer that  a long-established company with a reputation to uphold has made a piece. Such clear name- marks include Wedgwood, Minton, Royal Crown Derby, Royal Doulton, and Royal Worcester in Britain and Bennington, McCoy, and Hull in the U.S.

Though these marks are one of the best and easiest ways to identify ceramics, the shear number of them makes it impossible to every mark. Additionally, many small firms either saw no reason to use marks or sometimes used marks that haven’t been identified because of the short life span and limited production of the company.

To the collector a pottery mark can also identify the manufacturer and help establish the approximate date of manufacture and in several cases the exact year of production, particularly in the case of 19th and 20th century wares from the leading firms which employed private dating systems. With the increasing use of ceramic marks in the 19th century, a large proportion of English and American pottery and porcelain can be accurately identified and often dated.

Pottery’s added marks to their wares in several ways. They could incise them into the soft clay before the piece air dried, in which the mark will show a slight ploughed-up effect. Potters often do this to handmade pieces. Some manufacturers of quantity pieces, such as Wedgwood, impressed a mark into the soft clay using a metal or clay stamp or seal. 

Many pottery manufacturers used painted marks—usually containing their name or initial—added over the glaze at the time of decoration. Some used stencils.

Lastly, most 19th-century pottery makers used printed marks transferred from engraved copper plates at the time of decoration, often in blue under the glaze when the main design is also underglaze blue.


Pottery marks weren’t always universally used. In 1890, President William McKinley introduced the McKinley Tariff Act that imposed tariffs on many imports, including pottery, so that American manufacturers could more easily sell their products. The Act required that all such imports show the name of country of manufacture, such as “England,” “Germany,” “Nippon,” or “France.” In 1921, an amendment to the Act required that the phrase “Made in” precede the country of origin, such as “Made in England” or “Made in Japan.” However, some foreign companies began using the phrase as early as 1898. This is a great way for collectors to date foreign-made pieces.

Beginning pottery collectors often miss marks or flaws from manufacturing and instead focus only on the maker’s mark. These marks give clues to the quality of the ceramic bodies each maker used. Potteries used different firing techniques for different grades of ceramics and the distinctive marks each technique left behind, once known, help to establish the quality of a piece.

As a River Flows, So Does Flow Blue



QUESTION: My mom loved collecting odd pieces of old china. She died recently and now I have her collection. Among the many pieces are some with designs that are all dark blue and blurry. Are these mistakes or are they some sort of china I’ve never heard of?

ANSWER: No, those blurry pieces are not mistakes. They’re what’s known as Flow Blue. And while many people call this type of ceramics “china,” it’s actually pottery not porcelain. Beginning in 1820, potters in Staffordshire, England, began making it as a way to provide a more affordable alternative for middle-class people who coveted the fine blue and white porcelains being imported from China. As dinnerware, it enjoyed its greatest popularity between the mid-19th century and the beginning of the 20th century. And as an antique, it has gained popularity in recent years.

Potters used cobalt oxide pigment to create the darker hue of flow blue. The porous earthenware absorbed it and blurred when the pottery glaze fired. Although it blurred by itself, potters discovered that it could be made to really flow by the addition of a cup of lime or chloride of ammonia during glaze firing. This had the additional advantage of covering over printing faults, bubbles, and other defects in the pottery. As a result, some flow blue is so blurred that all details are invisible.

Josiah Wedgwood first produced Flow Blue around 1820. But it wasn’t until 15 years later that mass production began. Since flow blue was a decidedly Victorian era phenomenon, its production fell into three time periods.—early Victorian from 1835 to 1850, mid-Victorian from   1860 to 1879, and late Victorian from 1880 to 1900. During the early Victorian period, the most popular styles imitated the Chinese porcelains. But they were largely inaccurate depictions of the Chinese designs, mixing Chinese, Arabic and Indian motifs. Scenics and florals were also  popular during this time.



The mid-Victorian period brought greater creativity to Flow Blue wares, as potters mixed styles and ornamentation became elaborate and varied. Also during the mid-Victorian period, styles began to mix and merge with one another. So, there were things like Oriental-style plates with floral, Gothic, or scenic borders. Other elaborate motifs, like scrolls, pillars, columns, urns and wreaths became quite common. The pieces themselves included toilet wares and teapots, plates and platters, vases and garden seats, and even dog bowls.

Flow blue designs of the late Victorian period exhibited a marked Art Nouveau influence, with stylized florals and beautiful symmetry.

By the end of the Victorian Era, there were thousands of Flow Blue patterns. Though most Flow Blue wares came from English potteries, those in Germany, France, Belgium, the Netherlands, and the United States all made it as well. The most noted English potteries included such names as  Wedgwood, Grindley, Davenport and the Johnson Brothers, while in the United States, Wheeling, Mercer, and Warwick. 
By World War I, U.S. potteries were producing most of the flow blue for the domestic market, causing English potters to close up shop since these wares had never been popular in England. The desirability of the ware waned in both countries between the wars, but interest picked up again in the U.S. in the 1960s.

Antique dealers determine the price of Flow Blue wares mostly based on their pattern, color, and rarity. Patterns range from Blue Danube to Iris and Classic Willow. Especially sought after ones include Amoy, Cashmere, Scinde, Shell, and The Temple, as well as the La Belle pattern by American maker, Wheeling Pottery Company.

Collectors are always on the hunt for the early patterns from the 1840s. Unusual items such as rare shapes, egg baskets and egg cups, large sized platters and early tea and coffeepots command high prices. Egg baskets with eggcups will fetch over $1,000. A single eggcup in a rare pattern can fetch over $400, whereas a not so rare one would fetch maybe $65. Rare coffeepots could he worth over $2,000, and large turkey platters from the 1890s, $600 to $800 if the pattern is right.

Like a Bowlful of Jelly



QUESTION: Recently, I’ve begun to collect jelly molds. The ones I’m finding are mostly newer, but I’d like to perhaps add some older ones to my collection. Unfortunately, I don’t know much about these molds, except that many were not made to mold jelly as many people know it today. What can you tell me about the old jelly molds? Why did they come to be?

ANSWER: If you say jelly, most people think of fruit jellies in jars. While some people still make their own, the majority of people buy theirs at their local supermarket. Brands like Smuckers and Welch’s have become synonymous with jelly. But early jelly molds contained mostly other types of foods.

White earthenware jelly molds, particularly those produced in England around the turn of the 20tº century, are some of the most widely collected of all food molds. Although jelly molds have been produced in a variety of materials, including copper, tin, redware, yellowware, graniteware, cast iron, aluminum and plastic, over the last several hundred years, it’s the white earthenware ones that collectors favor. Cooks used these molds to form aspics, sweet jellies, mousses, and steamed puddings.

Historians believe the use of jellies began in medieval England, when people prepared the earliest of puddings, called blancmange, literally "white food,” from boiled milk and ground almonds, sometimes flavored with fish or poultry. Flummery, an oatmeal believed to have been the first food actually set in wooden molds, appeared during the late 17`º or early 18'"century.

Cooks prepared the earliest jellies---technically, aspics, being savory rather than sweet --with gelatin they obtained from cows' feet and sheep's heads, which they flavored with meat extracts. They used shavings from deer antlers to make hartshorn jelly. They employed Isinglass — a natural substance obtained from the air bladders of certain fish, and containing about 90 percent gelatin—to help improve the setting qualities of jellied foods. When cooks created the first aspics in the 18th century, the scope and use of molds broadened considerably.





By the 18th century, sugar had become widely available, and sweet jellies became popular. Cooks used wines, fruit juices and nuts used as flavorings, and colored their jellies with boiled down plants and other natural sources, including insects. The most common colors were lemon yellow, orange, ,and violet. People used individual bowls  or glasses until about the mid-1700s, when molds became larger.



One of the main suppliers of earthenware jelly molds was Wedgwood. Although best known for decorative pieces, Wedgwood produced many jelly molds. The company’s two-part "core molds" from the 18th century were well suited to translucent jellies. These molds remained in place once a cook unmolded the jelly. The hand-painted enameled designs on the inner core were visible through, and magnified by, the jelly, making for a handsome display. Wedgwood intended these jellied creations only as table decorations, not for consumption. Other Wedgwood molds featured classical and Egyptian themes, animal and birds, Prince of Wales' feathers, and the emblems of England, Ireland, Scotland and Wales. The firm designed molds with eagle and corn-on-the-cob motifs for the American market.

In the 19th century, middle-class housewives began to use jelly molds. Molds came in a wide variety of shapes, including geometric forms, with their designs of swirls, tiers, and/or spirals, and . "architectural" styles. Architectural molds incorporated 18th and 19th century neo-classical building elements such as grooved columns, acanthus leaves, pieces of egg-and-dart molding, and rounded ornamental knobs. Various fruit, flowers, wheat, corn and animal patterns were also abundant. Cooks used many molds from this period for all kinds of food, from rice to ice cream to pudding. They used some pudding molds to steam or bake in while they used others for chilling and setting pudding that they had cooked in a saucepan. Generally, pudding molds intended for baking or steaming had a tube or spout in the center, much like an angel food cake pan, to allow for more even cooking.

Minton produced pyramid jelly molds as early as 1824. Historians believe these molds to have been two-part core molds similar to those produced by Wedgwood. Minton's 1884 catalog illustrates 63 different molds, featuring recumbent lions, crowns, wheat sheaves, shells, grapes, pineapples, other fruits, fishes, and florals. They also made  architectural molds. Minton molds often have a foot rim, a bluish tinge and no mark.

Another notable manufacturer was W.T. Copeland, a company that produced a prolific number of molds well in the 20th century, including architecturally inspired designs,  various fruits, chickens, bears, dolphins, and conch shells.

By the late 1880s, when advances in printing made colored cookbook illustrations possible, aspiring hostesses could prepare luscious-looking molded dishes. Using exotic molds such as those in Copeland's catalog, cooks used differently colored gelatins, as well as bits of food placed in the mold to create an attractively patterned surface when they turned out the jelly.

The Victorian era was the heyday of the jelly mold. When World War I began, may firms went out of business. Instant gelatin desserts, such as "JELL-O", took much of the work out of making molded desserts and the status as well.

NOTE: The title of this blog comes from the poem “A Visit from Saint Nicholas” by Clement Clarke Moore, published in 1823. Most people probably never would connect a “bowlful” of jelly with jelly molds, but prior to the poem’s creation, many people used bowls to molded their jellies.

What a Sweet Idea



QUESTION: My mother collected honey pots almost all of her adult life. When she died, she had over 200 of them. Now I have her collection. And while many of them are fun to look at, I know very little about them. What can you tell me about my honey pots? How did they get started and what can I do to maintain and continue my mother’s collection.

ANSWER: First, it’s great to hear that you want to continue collecting honey pots. Too many people inherit collections from their parents, only to sell them off or leave them to collect dust in their attic. Continuing a collection is a great idea, but you need to know something about the items you’re collecting.

People use honey pots to hold the sweet viscid material produced from the nectar of flowers in the honey sac of bees. Bees, beekeepers and honey have been documented since ancient times. One of the more interesting discoveries made by archeologists in the tombs of Egyptian kings was containers of honey. Considered the golden liquor of the ancient gods, two honey pots pulled from New Kingdom tombs, dating from 1400 BC, still had their contents intact. And the Egyptian Pharaoh Ramses III made sure he was in good with the Nile gods by offering them 15 tons of honey.

Honey is one of nature's great miracles. In fact, honey discovered in ancient Egyptian tombs is still edible today. Since bees depend on honey for substance during the winter, they need to create something that will last a long time.

While the most popular form of honey pot is the skep-shaped pottery, honey pots can be found in numerous shapes and sizes. The pots can be found in rectangular, round and box shape. Most collections include a myriad of designs, colors and patterns from many different countries. The United States, France, Germany, England, The Netherlands, Spain, Scotland, Norway, Japan and Ireland are some of the countries represented in many collections.

Although rare pots sell for as high as $1,000, many vintage ones can be found at flea markets or antique malls. The most expensive pots have back stamps by potteries such as Irish Belleek, Limoges, English Moorcroft, Spode, Wegdwood, Royal Winton, and Noritake. Several leading companies represent the United States, including Lenox, Cambridge, Fostoria, Westmoreland, and Imperial Glass. The Indiana Glass Worlds produced a red honey dish in the late 19th century designed to hold one piece of honeycomb. The dish design contains four beehives and 40 bees. The Indiana Glass Works later produced a replica of the same piece.

In countries around the Mediterranean, potterers inscribed the word “Miel” or “Mel” or “Miele” on their pots. England and Germany have a rich tradition of beautifully decorated honey pots. However, in Holland, people didn’t make very much of setting an elaborate table with a separate piece of matching china for each category of food. So, honey was kept in very simple pots covered with cork or parchment paper. In the 1950's the Dutch honey firm Mellon a issued some very nice white pots with a brown lid, a honey pot made of glass and a honey pot in the shape of a bee.

Pots can also tell a lot about other cultures. Scandinavian pots are very modem, English pots are richly decorated, American ones have bears on them, as do Russian pots. Southern European honey pots are mostly made in the form of a Grecian amphora.

The stinger in collecting honey pots is trying to find all the pieces intact—the pot, lid, spoon, and under plate. The weakest part of any honey pot is the bee’s wings. Before you buy a honey pot for your collection, be sure to check for chips, restorations, an in particular, re-glued wings. Only be tempted to buy such pots if they’re inexpensive or exceptional.

Ping the base of a pot with your fingers. You should hear a ringing sound. A thud, or muffled sound should immediately arouse suspicion, as there may well be invisible cracks.

Check that the pot has the correct lid. Flea market dealers, in particular, often match lids with the wrong base, whether on purpose or not. Slight variations in glaze color between the lid and the base can be normal.

If any of the pots you purchase contain honey, empty them as soon as possible. Honey can sometimes stain them or leak from under the lid.

Romance on the Dining Table



QUESTION: I have some dishes that belonged to my grandmother. I believe they’re over 100 years old. Each has a scene in the center in light blue on a white background. From research I’ve done, I know they’re called Staffordshire, but I still haven’t been able to find much about them. Could you tell me something about them, especially the decorative scenes?

ANSWER: Wedgwood & Co., Unicorn & Pinnox,Works, Staffordshire Potteries, not to be confused with Josiah Wedgwood & Sons, made your dishes. They specialized in making earthenware and stoneware pieces for everyday table use from 1860 to1965. Your particular dishes date somewhere from 1860 to 1890. 

Many people think Staffordshire is a company, but it’s actually a geographical region encompassing 12 shires in England. Many English potters established themselves there because they found the clays  superior to those found elsewhere in England. In fact, potters have been at work there since the days of the Roman occupation.

In the late 18th century there were as many as 80 different manufacturers in the ;Staffordshire district. By 1802, the number had increased to 149. No single company is responsible for manufacturing Staffordshire dishes. Each potter produced his own wares employing a different border from the others.   These border could have medallions, scrolls, lace, shells, flowers, or trees.

Staffordshire potters made their wares from white earthenware pottery found nearby. Workers applied decoration using a method called transfer printing, developed around 1755. They accomplished this inexpensive method by engraving a design onto a copper plate, which they then inked with special ceramic paint and applied to thin paper. Pressing the paper onto the surface left ink behind.

After inking each piece, another worker placed the object into a low-temperature kiln to fix the pattern. The printing could be done either under or over the glaze on a ceramic piece, but since the ink tended to wear off on overprinted pieces, potteries switched to glazing the inked surface after the initial firing.

Scenic views of the Orient and of romantic European destinations with castles and towns became popular. The inspiration for these came from classical literature which was popular at the time. The most valuable plates,. however, are those with American scenes, produced between1800 and 1848. Enterprising English potters arranged with artists traveling in America to sketch the sites for their ware. Leading Staffordshire potters like Adams, Clews, Meigh, Ridgway, Stevens, and Wood, plus those from  hundreds of small companies created American views.

The firms manufacturing these wares included Ridgway, Johnson Brothers, Spode and Wedgwood along with many others. Josiah Wedgwood eventually used the transfer process to decorate his familiar ivory Creamware.

Stamps on the back of each piece often indicated the pattern with or without the maker's trademark. Since several companies employed the same patterns, identifying some pieces can be difficult. At first potters used deep cobalt blue and white designs to simulate wares made in China. These remain sentimental favorites in the United States and England. As technology improved, the shade lightened. By 1850, potteries began using other colors, such as pink, red, black, green, brown and purple.

Most transferware patterns sought by collectors today are two-tone. Blue and white, red and white, and brown and white are the most common combinations. Transferware has become increasingly pricey in the last 10 years, mostly due to articles about using it for decoration to liven up today’s bland home interiors.
